What accepting a quote commits you to

Read the quote as the contract it's about to become: scope of work and exclusions, price and whether it's fixed or an estimate, validity period, payment schedule, and any reference to terms and conditions on the back or a website, those get incorporated when you sign.

If anything was agreed verbally, a start date, a cheaper material, get it onto the quote before signing rather than after. The signed, flattened PDF is the version everyone will point to.

Is a signed quote binding?

Generally yes, a clear offer plus your signed acceptance forms a contract in the EU, US, and UK, and a simple electronic signature is recognized for it. Note the reverse too: some quotes state they're non-binding estimates until a separate order confirmation; the document's own wording decides which regime you're in.

Can the price change after I sign a quote?

That depends on the quote's own terms: fixed quotes bind the price; estimates flag that final costs may vary; many include validity windows or material-cost clauses. Whatever the wording says when you sign is what governs, read that line before you place the signature.
